Bean to bar
Five days from bean to bar.
Every bar starts as a sack of cocoa beans in our kitchen. No shortcuts and no rush, just good beans, cane sugar and time.
- Roast Small batches, low and slow, until the whole kitchen smells like brownies.
- Crack & winnow We crack the beans and blow away the papery shells, leaving pure cocoa nibs.
- Grind & conche Two days in the stone grinder turn nibs and cane sugar silky smooth.
- Temper & mould Cooled on marble for snap and shine, then wrapped by hand.

Winter collection
Spiced, painted and gone by spring.
Made only while it is cold outside: cinnamon stars, bauble truffles and stirring spoons for very serious hot chocolate.

Our story
A very small kitchen with a very big copper pan.
We started with a secondhand stone grinder, a marble slab and a stubborn idea: chocolate should taste of the bean, not just of sugar. We still make every batch by hand, a few trays at a time.
The tasting club
Be first to taste every new batch.
New batches, seasonal boxes and first dibs on Saturday tastings. One letter a month, never more.
